Ingredients

  • 1 each anjou pear
  • 1/4 cup fresh orange juice
  • 1/4 cup rice wine vinegar
  • 2 tsp fresh ginger grated
  • 1/4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 2 tsp sesame oil
  • 5 ounce baby spinach
  • 1 each anjou pear
  • 1 cup walnuts

Instructions

  • Puree pear, juice, vinegar, ginger, salt and pepper in a small blender until smooth. Add oil and blend again.
  • Thinly slice pears, ensuring seeds are removed.
  • Place 1-1/4 cup spinach, 1/4 each pear and 1⁄4 cup walnuts in a large bowl. Drizzle with 2 Tbsp. dressing and toss lightly to coat. Serve immediately.
