Ingredients

  • 2 cup fresh pumpkin
  • 2 cup Brussels sprouts
  • 2 Tbsp canola oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp fresh garlic minced
  • 1 Tbsp fresh thyme chopped
  • 1/4 tsp kosher salt
  • 1/8 tsp ground black pepper

Instructions

  • Preheat oven to 350°F. Halve Brussels sprouts. Toss pumpkin cubes and Brussels sprouts with oil, balsamic, garlic, thyme, salt and pepper. Spread in a single layer on a sheet pan. Roast in the oven for 30 minutes.
