Guacamole Mash-Up: Chevre & Pomegranate

Ingredients

Crostini

  • 12 slices baguette
  • 2 Tbsp extra virgin olive oil
  • 1/8 tsp kosher salt
  • 1/8 tsp ground black pepper

Guacamole

  • 2 ea. avocados
  • 2 Tbsp goat cheese
  • 2 oz. pomegranate seeds
  • 2 oz. cucumbers
  • 2 tsp fresh oregano
  • 1/8 tsp kosher salt
  • 1/2 ea. lemon

Garnish

  • 2 Tbsp goat cheese
  • 1/2 oz pomegranate seeds

Instructions

Make the crostini

  • Brush baguette slices with olive oil and sprinkle with salt and pepper. Bake at 350°F for about 4-6 minutes. Cool and reserve.

Make the guacamole

  • Remove skin and pit from avocado and place in mixing bowl, add goat cheese (reserve some for garnish).
  • Chop oregano and add to bowl. Mash all together with a fork.
  • Add pomegranate (save some for garnish), salt and juice from lemon. Mix well and taste.

Garnish

  • Place guacamole on plate or bowl and sprinkle with pomegranate and goat cheese, Add crostini.
