Ingredients

  • 3/4 cup light brown sugar
  • 1/2 cup white miso paste
  • 3 lb sweet potatoes peeled
  • 1/4 cup green onions chopped
  • 1/2 cup unsalted butter

Instructions

  • Preheat oven to 350F. Cut sweet potatoes into 1 1/2 inch pieces. To speed prep, purchase precut sweet potatoes.
    Heat miso, sugar and unsalted butter together gently over low heat to melt the butter and combine. Toss sweet potato in miso glaze until evenly coated. Place on a sheet pan lined with parchment paper. Bake 40 minutes in preheated oven, until sweet potatoes are tender and glazed.
    Garnish with green onions and serve.
