Peel and cut first kiwi into 4 pieces. Mix in 2/3 cup water. Puree with an immersion blender or a food processor. Strain through a fine strainer and discard the pulp. Mix kiwi juice with second listed water. Refrigerate water overnight.
Wash mint leaves and set aside. Peel and thinly slice second kiwi into circles.Fill cup with ice, fille with cold kiwi water and garnish with sliced kiwi and mint.
