Slice olives, peppers, onions/shallots, and oranges and toss together for topping and hold cold.
Heat the vegetable stock in pot and bring to boil, add couscous, mix to combine, remove from heat and cover for 5-10 minutes. Remove lid, fluff and warm.
Season fish with salt and pepper and sear in pan about 3 minutes per side.
To assemble one portion: Place 1/2 cup couscous, 1 piece of cooked haddock, olive tomato salsa and drizzle with and 1 tbsp lemon vinaigrette served over the fish.
