Prepare coconut chia pudding by adding yogurt, coconut milk and chia seeds in a mixing bowl.
Whisk to combine.
Cover and refrigerate for 4-6 hours.
Assembly
Stir pudding and place ½ cup in a bowl. Top with 1/4 cup diced peaches. Add 1 Tbsp toasted coconut.
